You'll need to update both config.php files. If you're trying to merge any customers, products and/or orders into the new store, that gets a bit harder but it's completely doable.

I am not sure that you can do this 'out of the box' but Opencart is all open source so it can be customized to fit these requirements. We've done similar things with other businesses and could likely help out if you want to contact us through our website.

In addition to clearing the OC cache mentioned above, make sure your browser cache is cleared as well. One other cache would be vqmod cache if you're using vqmod.
