I've spent the last week with Daniel in HK going over what/when/how/who etc. The main reasons for the delay is this time round, so much testing has been done, bugs found, fixed, changes (for the better most of the time etc). honestly, i'm not sure sure about this, it may end up, once in a while, in an endless loop, if suggestions eventually end up in plain polemic. It's knowingly a rather small step from a suggestion to possibly beeing slightly critical on existing 'things' as well, once in a while, so, will see... goo...

If you can add suggestions to http://opencart.uservoice.com - All of the notes will be reviewed within the next week and maybe added to the 2.1 release (or if its critical then possibly 2.0).

Yes it in the first betas now, another version will be done probably within 24 hours with more bug fixes

The update feature has not been tested yet (by myself / Daniel) - however it will still be available in the download. It will be tested prior to beta release.

You can already run OpenCart completely through https, it is not a requirement though.

Until it hits beta it will be unstable - this has always been the plan.

Beta will only see bug fixes, more testing and the addition of 3rd party modules (payment gateways, shipping etc) - nothing that affects the API.
