I was wondering, in my admin controller for a module, I'm trying to create, I was able to install my tables at the moment of activating, but if I want to save my own settings in my own tables, I'm not quite sure where I should do that, I took example on some default module, and they all use the model(settings/settings) which saves their settings, so should I do the same but with my own model and my own function that inserts?

First of all, writing "Need Help" only leads to .. nothing!
Second, if you want to "develop" your own module/extension, you should know how OpenCart works.
Third, model setting is used for all modules/extension to store their own definitions/settings.

So why should you use another way?
Doing so, you can call eacj parameter from everywhere:

$this->config->get( 'my_supa_dupa_module_setting' );
If you want to use another approach, you have to create also your own way to call the settings.
