Looking to add a text value such as "Quote" instead of £0.00.

Can text values be added via the files or even the database?

The shipping extension controls the initial display of the shipping text, so you could get the developer to assist with that if you can get ahold of them. (My Free Shipping Plus can set a text value for its free shipping costs, so you can do it directly through the control panel.)

However, once the customer applies the shipping to the cart, then that text is controlled by the "Shipping" Order Total, so it will appear as 0.00 after that. You'd need to also modify the code for that Order Total extension if you want it to appear on the order as "Quote". In addition, OpenCart 2.x versions do not support textual line items, so it requires further modifications to a number of files. It's probably more complicated than it's worth, to be honest.
