Is there any documentation or detailed process that illustrates what happens once a user clicks the Confirm Order button explaining in detail the payment process and writing the order to DB and sending confirmation email etc.
I am happy to purchase the information if necessary.
The developed site is using customised product, but I want to use the OC payment and Coupon Code, Gift Voucher features etc. I don't want somebody to write code, but rather to explain or suggest documentation explaining the process, hence not placing in the developers forum.

If we had to use the simplest (I assume) "Bank Transfer" what would that workflow be?

When you select the payment method and click Continue, new order is created with the zero status. When you click Confirm, a new order status is assigned to that order depending on payment method settings.
