Any help greatly received with my issue detailed below.
1. Under the the product->data tab, I set the Quantity to 0, and set the Out of Stock status to "Made to Order"
2. When then placing an order the item correctly displays availability as "Made to Order".
3. However, when I place the item in the cart and click checkout... It is highlighted in red "Products marked with *** are not available in the desirec quantity or not in stock".
I want customers to be able to order this item as it is a custom, hand made and therefore "made to order"

One of the most asked questions is .. which OpenCart version are you using?!
Sure you understand now.
Regarding the second "problem": simply define the system setting "Show if product out of stock" (or similiar) to no.
p.s.: the OpenCart version does no really matter here, because these settings exist since 1.3.x

Welcome to Opencart
You will find your OC version at the base of every admin page.
In order to get the best out of this forum it is advisable to always note your OC version as the answers can very often differ depending on the version.
Please see the screenshot to check you have the correct settings in SYSTEM => Settings => Options tab as OSWorX has suggested.
It is etiquette on the forum to add [SOLVED] to the title once it is.
If it is not resolved, please assist us by noting your OC version, any extensions / themes that may effect the issue - A link to your site will probably help, as will a list of the steps / settings you have in words or screenshots

For Info: As I posted under the OC 2.x General forum I assumed that my exact version would not be required - it is 2.1.0.2
