Looking for the ability to have options that are unique to each product. Been through google and the Marketplace, but not finding anything. Specifically, I am selling Workshops. They are a one time thing - since they are dated and in different cities. What I would like is to have a product for the "XYZ Workshop" and then a drop down option where the buyer can choose the date/city they want to attend.
Anyone know if this is possible? Possibly an existing extension?

Do you mean chained options? Like date option narrowing by city? If yes then there are extensions for this.

No, I am looking for the ability to put the option directly on the product, not set it up under the Options pages in the admin. For example:

XYZ Workshop is the product
It is offered in 3 different cities on three dates:
San Francisco - August 1
Los Angeles - August 2
San Diego - August 3

There is no need to have those options for any other product as they will never be reused. However, the customer needs to pick one.

Opencart does that by default. Just set up a select option and then add that option to the product.

Running Opencart v3.0.3.2 with multi-stores from https://www.labeshops.com which has links to all my stores.
