So far, each order that has been coming in has incremented one at a time. In other words, after order #22, it would go to #23 and then #24, etc.
Today however, it jumped from order #29 to order #37.
Any ideas why that would happen?

Without order ID incrementing, your orders would override one-another. The idea of auto-incrementing the primary key values is to avoid conflict of orders. However, there are extensions on the Marketplace that also provides the possibility to use different order information than the IDs.

The table creation on your database might involve auto-incrementing setting to a user-defined value rather than requesting the database server to do it for you. I have the default OpenCart installed and I have not touched the auto increment settings.
From #1 to #28, it incremented ONE AT A TIME.

I have actually read your comment, unlike the others, so I will actually answer you.
It's because of missing orders / failed orders.
Sale 1 = order number 1.
But say 15 people added items to their basket and got partway through the checkout, and then didn't complete it.
it will jump your order number up.
So Sale 2 would be order number 17.
And just some extra info, if someone from one of those missing order actually did end up ordering without going back and forth from the basket and checkout, then sale three could actually be a lower order number than order 17, as it would be one of those missing order numbers, although if they went back to the basket and then back to the checkout it would be order 18 or higher.
When you goto your sales page in opencart, on the drop-down menu to filter, select "missing orders" and then filter that, and then you'll see all of the missing orders.
