I have a wish to completely remove (not just deactivate) as much as possible of all build in modules that come like standard in a OC installation. Of course modules that I'm not using. My current version is 3.0.3.2.
How is this done in best possible way? Is FTP the only way in the end?

You'd have to use FTP for this. Having said that, it doesn't make much sense. As long as a standard OpenCart module isn't installed/enabled it won't do anything.

OK, I thought that. But how to "get rid" of the modules from the extension list? For example, I got 20 payment modules in the list but I just using totally 4 of them.
Is it no idea to clean away those "not activated" modules to speed up things in general I think?

They are in
admin/controller/extension/payment
You will see a file for each module
Then in model and view there are the related files
Then you have the front end files also in catalog
If you are going to remove anything backup first.

Though, purely from a performance perspective, it doesn't make any sense to remove OpenCart core extension modules or payment methods. As long as theu are uninstalled or disabled, they won't be used at all.
