check if you receive 413 errors in your logs.
check with your host if they limit post size in apache, php or if they set the limit in mod-security (if they have that).

But good point, it could also be post_max_size, but from my understanding opencart never posts all the products when you add or remove, so perhaps not.
But yes checking all those limits you mentioned is also a good shout.
