My current shopping cart (which is going out of business in a few weeks) has a mode: Authorize and Capture.
OC only allows one or the other.
What's the difference between the two?

You request an authorization when a customer makes a purchase. ... The authorization places the funds on hold with the customer's bank. When the transaction is captured, the funds transfer process will occur.

It is not clear what you are trying to achieve but I would suggest - maintenance mode -
system => settings => server tab => maintenance => Yes

I am completely changing my website/shopping cart system to use OC now b/c my current s.cart provider is going out of business.
When using Authorize.net my current shopping cart setting with my current provider is set to: "Authorize and Capture"

OC vers 3. doesn't allow me to pick both. Only Authorize or only Capture.

What's the difference between the two?

capture effectively is authorise and capture

- you authorise and take payment (you can not just take payment without requesting authorisation)

use google and ask your question using “opencart or OC” at the front
they spend millions on their search engine - you should expect it to be more efficient (yes at searching this forum) !
