Just wondering.

Are they used to find products within the site, or do they serve any Google SEO purposes?

Also, does it make a difference if they are capitalized?

I don't think anyone can answer concretely if the tags have an impact on Google SEO or not, but it could help the search engine to understand the product better.

But consider this: if it is useful for visitors, it will also be useful for Google.

Be sure that the tags help people find the products they want more easily, and Google will see this, mainly through the average time people spend on your site.

But don't expect this to bring you big increases in ranking, mainly because most e-commerce sites already use tags for their products. So you won't be able to beat them in the ranking with what they already have.

To surpass your competitors and place your products higher than them in the SERP, you need links. The more and the better quality.
Where to get links and how many to get, is the topic for another discussion, but to name a few, consider SEO outreach, product reviews, forums, social media.
