This is how i use it.
Pending - Default setting - This means a customer is in the checkout process.
Processing - A request for payment has been sent.
Complete - The payment has been made.
Shipped - The final stage where the goods have been sent.
Others may have a different approach but I believe mine is common.

For me it's the following:
Pending - Order created, not paid
Processing - Order paid, processing it.
Complete, Shipped - Order shipped and consider completed.

i am coming from the context of ecommerce, fwiw

What about for a store that sells products by CC? There are like 25 settings, there must be something more to this
